INGREDIENTS (1 SERVING)

⦁ ¼ cup chia seeds (32 g/ 1.1 oz)
⦁ ¼ cup coconut milk or heavy whipping cream (60 ml/ 2 fl oz)
⦁ ½ cup water or almond milk (120 ml/ 4 fl oz)
⦁ 1 tbsp raw cacao powder, unsweetened
⦁ 1 tbsp Erythritol or Swerve (10 g/ 0.4 oz)
⦁ 5-10 drops Stevia extract
⦁ top with ½ tbsp raw cocoa nibs or extra
⦁ dark chocolate
⦁ OPTIONAL:  add ¼ tsp cinnamon and a pinch of cayenne pepper

INSTRUCTIONS

  1. Mix the chia seeds, coconut milk, water, cacao powder, Erythritol and stevia. If you prefer a smoother texture, place into a blender and pulse until smooth.
  2. Let it sit for at least 10-15 minutes, ideally overnight in the fridge.
  3. Top with cocoa nibs just before serving.
